“REALLY GOOD!”
INGREDIENTS:
1 cup corn meal
1 1/2 cup flour
4 teaspoon baking powder
1/2 teaspoon salt

1 cup maple syrup
2 beaten eggs (or eggbeaters)
1/4 cup vegetable oil
1 cup milk

DIRECTIONS:
1. | While still at home, combine corn meal, flour, baking powder and salt and place in zip lock bag. Include recipe in bag for use at campsite. |
2. | At the campsite, add syrup, eggs, oil and milk and pour into a preheated, greased Dutch oven. Replace lid and bake for approximately 30 minutes (if hot coals are put on top). |
3. | Bake batter until firm. Toothpick test is not reliable with this recipe. |
